Fundraising, Food and Follow-up

Good morning everyone!  I hope your weekend was fabulous, mine certainly was.  Very busy, but a great weekend. 

Montage Monday

We contribute a gift certificate to an annual fundraising event for children’s advocacy in the Houston, Texas area.  This weekend the wonderful family that purchased our gift certificate came to stay with us.  It was such a great weekend that I feel as if I have new family members.

One thing we did differently this year was to include a home cooked Surf and Turf meal for the family as well.  I had the opportunity of trying a few new dishes.  We served Bacon Wrapped Filet Mignon prepared on the grill and baked Bacon Wrapped – Jalapeno Cream Cheese Stuffed Shrimp (I wish I had taken pictures, they were absolutely gorgeous when they came out of the oven).    For side dishes we had a yummy carrot and apple dish, mashed potatoes with butter, cream cheese and fresh bacon bits, and a salad with Olive Garden Dressing (bottled) and homemade Italian croutons.  (I hadn’t realized that we really had a bacon theme going here.)

Dessert was a scrumptious apple filled crescent, covered with a sugary sauce and then baked to a golden brown.  We served it with Vanilla Bean ice cream and our homemade caramel syrup as a topping.  Although I didn’t eat any of it (more on that in a minute) Kent and the guests said that it was very, very good!

Since I was so busy cooking, I completely forgot to take pictures of any of it.  However, I am posting links to each of these recipes, with the exception of the steaks.  My husband seasoned and then grilled them.  I will tell you some of his secrets though.  He always seasons them at least the day before, and then brings them out of the refrigerator at least half an hour before he is going to cook them. 

The steaks were purchased at a local meat market and they were absolutely delicious and so very tender.

Bacon wrapped stuffed shrimp  (Scroll down the page to the second recipe) I didn’t have any Serano Peppers or the Tupelo honey, but I did use Jalapeno’s and just regular honey. 

Apple Carrot Casserole  When I make this again, I think I will cut down on the apples a bit and increase the carrots.  The flower didn’t work in as well as I would have liked, so next time I will mix the flour in a bit before cooking.  All of that said, it was delicious.

Italian Croutons  I have made these croutons before and I really like them.  I also serve them with my homemade cheese dip.  You can find the recipe and tutorial here that was posted back on June 11th.

7-Up Apple Dumplings  I made these as the recipe calls for except the nuts.  As I mentioned, I served them with vanilla ice cream and homemade caramel syrup.  Yummy!!

Mashed Potatoes – When I make mashed potatoes, I usually try to cook up a large batch.  I put the leftovers into muffin cups and freeze them.  Once they are frozen, I put them into a zip lock baggie.  When we want some yummy mashed potatoes, I just pull them out of the freezer and heat them in the microwave.  Saves cooking when I don’t have the time.

My husband came up with this recipe for the potatoes.  Peel, cut, and cook your potatoes until tender.  Drain them, and then while mashing them add cream cheese, a dash of milk, butter (we like a lot).  When everything is mixed well, add your bacon bits and mix them in well.  Sorry, but it isn’t a written recipe.

One last thing, they really loved our Baked French Toast Casserole and Buttermilk Caramel Syrup  (syrup is from Kara at Creations By Kara)- her recipes are fabulous) at breakfast.   Perhaps I will share those recipes with you next week. 

Adventure Update

If you recall, last week I asked you to go on a journey with me.  My intention is to give you an update each Monday, so here goes.  I was on the plan for a couple of days before the weekend.  Honestly, on Saturday, I didn’t take a single Isagenix product.  I was too busy cooking.  (lol)  I did lose 3 pounds last week, and kept it off even though I didn’t follow the plan on Saturday.  I started in again on Sunday morning and as of this morning I have lost a total of 5 pounds. Stay with me as I continue this journey.  Knowing that you are along with me has helped me keep from snacking, more than once.  Remember, if you want to know any more about this product, you can check it out at my website here.  Or, send me an email and I will answer any questions I can.  If I don’t know the answer, I will find out for you.

  1. Good morning! My goodness all that food sounds fantastic! I don’t eat beef, but I would have gotten by fine on the side dishes 🙂 I, like you, get busy cooking and totally forget to photo anything, ha! Many a planned recipe post has been lost this way. Do the mashed potatoes get mealy at all when frozen? I know there’s a way you can, but if you’re not careful the texture changes. Very cool about the gift certificate. Oh and lately I have been focusing hard on cutting down on sweets and I have noticed an impact on my weight and how I fell, just an idea 🙂

    • I was really kicking myself when I realized what a great shot of the shrimp got away from me. They looked awesome when they came out of the oven. I have had no issues with the potatoes becoming mealy when reheated. You could probably reheat them in the oven as well. My husband really doesn’t like re-heated foods (leftovers). But he thoroughly enjoys these potatoes.

      It has been a pleasure to support that group. This was a family of 5, the parents, 2 grown daughters and a grandchild. They were just wonderful. We all got really close over those 2 days. It is amazing how quickly you can bond with folks.

      I totally agree about the sweets. They can really be a downfall. One of the reasons I am doing the Isagenix is because of the digestive issues that I am having. Hoping it will help with that as well as the weight and other physical issues.

    • I’ll have to try the potatoes thing. I love the individual portions idea. Maybe it’s the cream cheese that helps.

    • Hi Steph. The cream cheese might make the difference, I don’t know. But we have always enjoyed them. I like to use the large muffin tins, that way you have a pretty good size portion when defrosted. This time, however, I had a regular muffin tin out already, so I just used it.

    • Hi F.K. They really are awesome. I had never cooked fresh shrimp before. I have always bought the frozen that is pre-cooked. So, this time we bought fresh which had been quick frozen. Peeling and deveining was a new experience for me. But do give them a try. If you like shrimp, you won’t be disappointed.
